Beef Sandwiches with Au Jus

A quick dinner for a busy night or for a large group.

Ingredients
  

  • 1 T light olive oil
  • 1 green pepper sliced in 1/4" strips
  • 1 large sweet onion sliced in 1/4" strips
  • 1 clove garlic minced
  • 4 cups water
  • 4 tsp Jamieson's beef bouillon
  • 1-2 tsp Gravy Master optional
  • 1/2 tsp dried thyme
  • 1/4 tsp fresh ground pepper
  • 1 bay leaf
  • 1 lb sliced seasoned deli beef
  • French baguettes for sliced buns
  • Provolone cheese optional

Method
 

  1. Over medium heat in a sauce pan, saute green peppers and garlic in olive oil until all are slightly browned.
  2. Add remaining ingredients and let simmer for 15-20 minutes.
  3. Ten minutes before sandwich prep, preheat oven broiler.
  4. Slice open baguette rolls. Drop sliced beef into saucepan with au jus. Let heat briefly (1-2 minutes) and immediately place on sliced rolls. Top with Provolone and put under broiler until cheese is nicely melted and bubbly.
  5. Serve sandwiches with small bowl of au jus for dipping.
