Pour pecans into a large bowl.
In a separate bowl, mix together granulated sugar, dark brown sugar, cinnamon, salt, and nutmeg.
In another bowl, whip egg whites and water until frothy.
Add egg white mixture to the pecans and stir until coated.
Add the sugar/seasoning mixture to the pecans, stir until coated.
Melt butter into a glass measuring cup in the microwave at 50%.
When melted, add in the vanilla and corn syrup. Stir mixture and add to pecans. Stir until coated well.
Transfer to baking sheets or roasting pan.
Bake at 225 uncovered for 1.5 hours.
Stir every 30 minutes.
Once done, let cool and store in airtight containers.
