Preheat oven to 350 degrees.
Prepare 2 loaf pans with grease (butter) and wax paper bottom liner.
With electric mixer, cream together sugar and oil until well mixed. Add beaten eggs and then pumpkin. Mix until all are blended.
Sift together all dry ingredients in a large bowl.
With electric mixer, add alternately the dry sifted ingredients with 2/3 cup water to the pumpkin mixture.
Add whole walnut pieces and mix by hand.
Sprinkle bottom and sides of loaf pans with sugar sprinkles. Pour batter evenly into both pans.
Sprinkle top of loaves with chopped nuts then a good dose of sugar sprinkles.
Bake on middle oven rack for 45 minutes to an hour. Longer if necessary. Test doneness with toothpick (should be batter-free after inserting into middle of loaf).
Use a knife to separate the loaves from the sides of the pans and let cool in pan for about 15 minutes. Then remove from pans and let cool on rack.
Eat.
Enjoy!
