Savory Meatloaf

Comfort food at it's best. This recipe was a famous family tradition in the Webster house for Noelle and Alex, as their mom would make a heart-shaped meatloaf EVERY Valentine's Day to show them how much she absolutely loved her girls. One of Cory's absolute favorites for leftovers (cold meatloaf sandwiches). :)

Ingredients

  • 3 lbs ground chuck
  • 4-5 slices of bread
  • 1/2 c milk
  • 3 eggs
  • 1 medium onion cut into chunks
  • 5-6 stalks celery cut into chunks
  • 2 cloves garlic
  • 3 tsp salt 1 tsp for each lb meat
  • 1/2 tsp pepper
  • 3 Tbsp yellow mustard
  • 1 Tbsp dried parsley
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • 1 crushed bay leaf
  • unseasoned breadcrumbs

Instructions

  • Preheat oven to 350 degrees.
  • In food processor, first blend bread, milk & eggs. Add remaining ingredients (other than meat & breadcrumbs) into food processor and blend on high until all chunks are smooth.
  • In a large bowl, break up ground chuck and pour blended mixture over meat. Mix together by hand or large spoon until completely mixed with no chunks of meat left.
  • Form loaf (or your favorite shape, such as a heart for Valentine's Day ;) ) in a 13x9 baking dish. Create diagonal slashes with a knife in the loaf to let the juices self-marinate while cooking.
  • Sprinkle unseasoned breadcrumbs over the loaf and coat thoroughly.
  • Pour water over the loaf to moisten breadcrumbs and create a bit of a bath (about 1/4 to 1/2 inch deep) in the dish.
  • Bake at 350 degrees for 1 to 1 1/2 hours until lightly browned on top and fully cooked.
