Chili

We made this for a Sunday gathering with myself, Noelle, Alex, Chris, and Zeke. Added some sour cream, red onion, cheddar cheese, and crackers. Served it with some corn bread.

Chili

This is a meaty chili with a slight kick and a certain richness from cocoa powder.

Ingredients
  

  • 3 lbs ground chuck
  • 1 large yellow onion diced
  • 1 large red onion diced (save some for garnishing)
  • 2 green bell peppers diced
  • 3 large cloves of garlic minced
  • 2 cans light red kidney beans
  • 1 can dark red kidney beans
  • 1 can diced tomatoes
  • 2 cans tomato paste
  • 10 tbsp or 3 packets French's Chili-O seasoning mix
  • ~2 tbsp cocoa powder
  • ~1 tbsp chili powder
  • Water

Method
 

  1. Cook ground beef in a large pot until completely cooked.
  2. Drain the beef and return it to the pot.
  3. Add onions, bell peppers, and garlic to the meat. Sauté until onions are transparent.
  4. Salt and pepper to taste.
  5. Add beans, seasoning mix, chili powder, cocoa powder, diced tomatoes, tomato paste.
  6. Add enough water to make the desired consistency (about 2 cups).
  7. Bring to a boil and cook over low heat for at least 30 minutes (a couple hours is better), stirring frequently. Add a little water if it starts to get too thick.
  8. Let it cool for a few minutes before serving.
  9. Garnish with red onion and sour cream. Serve with corn bread.

Notes

When I make this, I tend not to measure the seasonings or the water. For an extra kick, add more chili powder. For a richer flavor, add more cocoa powder. For a soupier chili, use more water. Just go with what your gut desires!
