Chili

We made this for a Sunday gathering with myself, Noelle, Alex, Chris, and Zeke. Added some sour cream, red onion, cheddar cheese, and crackers. Served it with some corn bread.

This is a meaty chili with a slight kick and a certain richness from cocoa powder.

Ingredients
  

  • 3 lbs ground chuck
  • 1 large yellow onion diced
  • 1 large red onion diced (save some for garnishing)
  • 2 green bell peppers diced
  • 3 large cloves of garlic minced
  • 2 cans light red kidney beans
  • 1 can dark red kidney beans
  • 1 can diced tomatoes
  • 2 cans tomato paste
  • 10 tbsp or 3 packets French's Chili-O seasoning mix
  • ~2 tbsp cocoa powder
  • ~1 tbsp chili powder
  • Water

Instructions
 

  • Cook ground beef in a large pot until completely cooked.
  • Drain the beef and return it to the pot.
  • Add onions, bell peppers, and garlic to the meat. Sauté until onions are transparent.
  • Salt and pepper to taste.
  • Add beans, seasoning mix, chili powder, cocoa powder, diced tomatoes, tomato paste.
  • Add enough water to make the desired consistency (about 2 cups).
  • Bring to a boil and cook over low heat for at least 30 minutes (a couple hours is better), stirring frequently. Add a little water if it starts to get too thick.
  • Let it cool for a few minutes before serving.
  • Garnish with red onion and sour cream. Serve with corn bread.

Notes

When I make this, I tend not to measure the seasonings or the water. For an extra kick, add more chili powder. For a richer flavor, add more cocoa powder. For a soupier chili, use more water. Just go with what your gut desires!
