Candied Pecans

Made my own recipe for these based on a previous try for Xmas ’15. To quote Chris.. “Lets just say it’s probably a good thing you gave me a small container.. Because holy cow that shizniz is good.”

Candied Pecans

Total Time 1 hour 40 minutes

Ingredients
  

  • 2 lbs pecan halves
  • 2 egg whites
  • 2 tsp cold water
  • 1 cup granulated sugar
  • 1 cup packed dark brown sugar
  • 1 stick of salted butter
  • 1 tablespoon Madagascar Bourbon Vanilla extract
  • 2 Tbsp light corn syrup
  • 2 tsp of cinnamon
  • 1 tsp nutmeg fresh grated if you have it
  • 1 tsp salt

Instructions
 

  • Pour pecans into a large bowl.
  • In a separate bowl, mix together granulated sugar, dark brown sugar, cinnamon, salt, and nutmeg.
  • In another bowl, whip egg whites and water until frothy.
  • Add egg white mixture to the pecans and stir until coated.
  • Add the sugar/seasoning mixture to the pecans, stir until coated.
  • Melt butter into a glass measuring cup in the microwave at 50%.
  • When melted, add in the vanilla and corn syrup. Stir mixture and add to pecans. Stir until coated well.
  • Transfer to baking sheets or roasting pan.
  • Bake at 225 uncovered for 1.5 hours.
  • Stir every 30 minutes.
  • Once done, let cool and store in airtight containers.
