Pineapple Star Cookies

These are a little bit labor intensive, but oh so worth the effort. They taste a little bit like a cross between a pineapple turnover and a croissant. I’m not joking.

I found this recipe online and changed it up quite a bit with some excellent results. If you're making for Christmas, you might want to double the recipe to share your delicious creations with others. 🙂

Ingredients
  

  • 1 cup unsalted butter room temp
  • 1 pkg 8 oz cream cheese, room temp
  • 1/2 tsp vanilla
  • 1/2 tsp almond extract
  • 1 tbsp lemon juice
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tbsp sugar this is not a typo
  • FILLING:
  • 1/3 cup sugar
  • 2 1/4 tsp all-purpose flour
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 1/2 cup unsweetened crushed pineapple
  • FROSTING/TOPPING:
  • 1 cup confectioners sugar
  • 2 tbsp butter melted
  • 2 tbsp whole milk
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped walnuts

Instructions
 

  • Preheat oven to 400 degrees.
  • In a large mixing bowl, cream the butter and cream cheese until light and fluffy. Add vanilla, extract and lemon juice and mix until well blended. Add the flour, sugar and salt, mixing well. Divide dough in half, cover and refrigerate for at least 2 hours or until easy to handle/roll.
  • Meanwhile, in a saucepan, combine sugar, salt and flour; add pineapple and lemon juice, stirring until blended. Cook over low heat until mixture comes to a boil and is thickened. Cover and refrigerate.
  • On a lightly floured surface, roll out each portion of dough to 1/8 inch thickness. Cut into 3-inch squares and place 1 inch apart on ungreased baking sheets.
  • To form star, make a 1 1/4 inch cut from each corner toward center (do not cut through the center). Place 1/2 teaspoon of pineapple filling in the center of each square. Fold every other point toward the center, overlapping pieces; press lightly to seal. (Star arms tend to pop up while baking, so you might want to press & make a crease at the bend of each folded arm to help keep them in place.)
  • Bake at 400 degrees for 7 minutes then rotate cookie sheet and bake for 7 minutes longer or until golden. Remove to wire racks to cool.
  • For frosting, combine the confectioners' sugar, butter, milk and vanilla in a bowl until smooth. Drizzle over cookies and sprinkle with walnuts while frosting is still moist so they'll stick.
