Black Bean & Corn Salsa

Spicy and fresh. Best made with summer ingredients, but also good for football parties.

Black Bean & Corn Salsa

This makes a bunch and is good for a crowd.

Ingredients
  

  • 1 can black beans drained & rinsed
  • 4-5 cobs fresh cut corn or canned
  • 20-25 cherry or grape tomatoes
  • 8-10 sprigs cilantro finely chopped
  • 6-8 green onions sliced
  • 1 small red onion finely chopped
  • ¼ cup lime juice
  • 4 T taco seasoning
  • 1-2 fresh chili peppers finely diced Jalapeno pepper
  • fresh ground black pepper
  • 1 firm avocado diced & tossed in lemon juice & salt to taste

Instructions
 

  • In a medium bowl, put in beans and corn.
  • Put tomatoes in a food processor & blend until well chopped and add to bowl, including juice.
  • Chop cilantro, green onions and red onion and add to bowl.
  • Pour in lime juice and taco seasoning, then mix gently.
  • Seed and cut chili peppers, finely chop in food processor and add to bowl.
  • Add Jalapeno pepper and fresh ground black pepper to taste. (Also add more taco seasoning if needed.)
  • If not serving same day, wait to add avocado until day of serving. Serve with taco chips.

Notes

Aldi's has some really great authentic corn chips that go really good with this. They're called El Milagro Real Mexican Tortilla Chips. They are really thick and can handle the weight of a substantial salsa.
