Fun to do with kids because it’s a single-bowl recipe that doesn’t require a mixer and the results are really good!

Banana (Nut - if you want) Bread

Tasty and easy to make. Not to mention you won't have to throw out those over-ripe bananas that no one wants to eat.

Ingredients
  

  • 3 very ripe bananas peeled (about 1 1/4 to 1 1/2 cups mashed)
  • 1 tbsp lemon juice
  • 1/3 one-third cup melted butter, salted or unsalted
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cups sugar 1/2 cup or 1 cup if you want
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped walnuts or pecans divided (optional)

Instructions
 

  • Preheat oven to 350 degrees and butter a 4x8 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas and lemon juice with a fork until completely smooth. Stir the melted butter into the mashed bananas.
  • Mix in the baking soda and salt, then stir in the sugar, beaten egg and vanilla extract. Stir in the flour until all ingredients are thoroughly mixed. Add 3/4 cup of the chopped nuts, if desired.
  • Pour the batter into your prepared loaf pan. Sprinkle the remaining 1/4 cup of chopped nuts on top of the loaf. Bake for 50-60 minutes at 350 degrees until toothpick inserted into the center comes out clean.
  • Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely (or as long as you can stand to wait) before serving.
  • Enjoy the yum. 🙂
