One-Pot Shrimp & Spinach Fettucine Alfredo

I think I found this recipe on Facebook, but doesn’t matter. It’s deliciouso! I’ve added mushrooms into the mix, but you can add/subtract ingredients to your liking. Be sure to use frozen uncooked shrimp, or your shrimp will be super tough.

One-Pot Shrimp & Spinach Fettucine Alfredo

Quick and easy and delicious. Have all of your ingredients ready to go prior to getting started. This recipe goes fairly fast. Great with garlic bread, obviously.

Ingredients
  

  • 1 lb fettucine, cooked
  • 2 tbsp butter
  • 1 lb frozen uncooked shrimp, defrosted, peeled & deveined
  • salt & pepper to taste
  • 3 cloves garlic, minced
  • ½ lb fresh sliced mushrooms
  • 1/2 lb bacon, cooked & cut into small strips (or 1/3 c precooked bacon bits)
  • 7-8 oz fresh baby spinach
  • c heavy cream
  • ¾ c grated parmesan cheese (& extra for garnish)
  • c chopped fresh parsley

Instructions
 

  • Boil a large pot of salted water and add fettucine. Cook al dente. Drain and set aside, covered.
  • In a large pot/pan, heat the butter over medium heat until lightly browned.
  • Toss in the shrimp and season with salt & black pepper to taste. Sear just until pink on both sides. Remove the shrimp from the pan and set aside. (Err on the side of undercooked rather than overcooked. The shrimp will continue cooking when removed from the pot.)
  • Saute the garlic, mushrooms and bacon until fragrant. Garlic should be semi transparent. Add in the spinach and stir until it begins to wilt.
  • Pour in the heavy cream and stir to combine. Let the sauce come to a simmer and reduce until thick and creamy, about 5-8 minutes. Add the parmesan cheese.
  • Toss in the fettucine and turn pan contents until pasta is covered in sauce.
  • Sprinkle in the parsley (reserve 2 tbsp for garnish) and add the shrimp back to the pan. Toss until everything is warmed through and evenly coated.
  • Remove from heat and serve. Top individual servings with a sprinkle of parmesan and fresh parsley. Serve with a side of garlic bread if desired. Enjoy!

Notes

You can make substitutions/omissions to this recipe however you like. The key ingredients are the sauce - garlic, heavy cream, and parmesan. Use broccoli, or chicken, or just veggies for a vegetarian version.
