Found this recipe eons ago in a magazine while waiting in a doc’s office. A super quick and easy substitute when you have a taste for apple pie.
Apple Oatmeal Crisp
Super fast and easy. Great with vanilla ice cream and caramel topping.
Ingredients
- 6-8 medium tart apples, peeled, cored and sliced (~ 1.5 lbs) McIntosh or Jonathan are good tart varieties with good staying texture for baking
- 1½ cups rolled oats (NOT quick oats)
- 1½ cups brown sugar (light or dark)
- 1 cup all-purpose flour
- 2 tsp cinnamon
- ½ tsp salt
- 1 cup unsalted butter, melted (two sticks)
Instructions
- Preheat oven to 350℉.
- Evenly spread sliced apples in a greased 13x9 baking dish.
- In a medium bowl, stir oats, sugar, flour, cinnamon, and salt with a fork until thoroughly mixed.
- Pour melted butter over mixture and stir until all butter is absorbed into dry ingredients, and sprinkle evenly over apples in baking dish.
- Bake in oven for 35-45 minutes or until apples are tender and topping is crisp and brown.
- Let cool for 10-15 minutes and then serve warm. Can be topped with ice cream and caramel topping.
