Banana (Nut – if you want) Bread

Fun to do with kids because it’s a single-bowl recipe that doesn’t require a mixer and the results are really good!

Banana (Nut - if you want) Bread

Tasty and easy to make. Not to mention you won't have to throw out those over-ripe bananas that no one wants to eat.

Ingredients
  

  • 3 very ripe bananas peeled (about 1 1/4 to 1 1/2 cups mashed)
  • 1 tbsp lemon juice
  • 1/3 one-third cup melted butter, salted or unsalted
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cups sugar 1/2 cup or 1 cup if you want
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped walnuts or pecans divided (optional)

Method
 

  1. Preheat oven to 350 degrees and butter a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas and lemon juice with a fork until completely smooth. Stir the melted butter into the mashed bananas.
  3. Mix in the baking soda and salt, then stir in the sugar, beaten egg and vanilla extract. Stir in the flour until all ingredients are thoroughly mixed. Add 3/4 cup of the chopped nuts, if desired.
  4. Pour the batter into your prepared loaf pan. Sprinkle the remaining 1/4 cup of chopped nuts on top of the loaf. Bake for 50-60 minutes at 350 degrees until toothpick inserted into the center comes out clean.
  5. Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely (or as long as you can stand to wait) before serving.
  6. Enjoy the yum. 🙂
