Candied Pecans

Made my own recipe for these based on a previous try for Xmas ’15. To quote Chris.. “Lets just say it’s probably a good thing you gave me a small container.. Because holy cow that shizniz is good.”

Candied Pecans

Prep Time 10 minutes
Cook Time 1 hour 30 minutes
Total Time 1 hour 40 minutes

Ingredients
  

  • 2 lbs pecan halves
  • 2 egg whites
  • 2 tsp cold water
  • 1 cup granulated sugar
  • 1 cup packed dark brown sugar
  • 1 stick of salted butter
  • 1 tablespoon Madagascar Bourbon Vanilla extract
  • 2 Tbsp light corn syrup
  • 2 tsp of cinnamon
  • 1 tsp nutmeg fresh grated if you have it
  • 1 tsp salt

Method
 

  1. Pour pecans into a large bowl.
  2. In a separate bowl, mix together granulated sugar, dark brown sugar, cinnamon, salt, and nutmeg.
  3. In another bowl, whip egg whites and water until frothy.
  4. Add egg white mixture to the pecans and stir until coated.
  5. Add the sugar/seasoning mixture to the pecans, stir until coated.
  6. Melt butter into a glass measuring cup in the microwave at 50%.
  7. When melted, add in the vanilla and corn syrup. Stir mixture and add to pecans. Stir until coated well.
  8. Transfer to baking sheets or roasting pan.
  9. Bake at 225 uncovered for 1.5 hours.
  10. Stir every 30 minutes.
  11. Once done, let cool and store in airtight containers.
