The only reason these are called “Christmas Day Pancakes” is because we always make them on Christmas morning. Ha!
Christmas Day Pancakes
Fluffy and easy to make. We double-batch it (amounts in parentheses) when we have 6+ people for breakfast so there is plenty for everyone. Chris is our go-to pancake baker, and he's pretty darn good at it! Leftovers are delicious heated in the microwave, or freeze them for a quick breakfast later. If you're adding blueberries, frozen or fresh, toss your berries in a bag with 1 tbsp flour before adding to batter.
Ingredients
- 1 1/2 cups all purpose flour
- 3 1/2 tsp baking powder
- 1 tsp salt
- 1 tbsp granulated sugar
- 1 1/4 cups milk
- 1 tsp vanilla
- 1 tbsp rum (optional)
- 1 egg
- 3 tbsp butter melted
Instructions
- In a large bowl, sift together the flour, baking powder, salt and sugar.
- Make a well in the center and pour in the remaining ingredients.
- Mix until smooth.
- Heat a lightly oiled electric griddle or frying pan over medium high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Brown on both sides and serve hot.
