Clear Fruit Glaze for Cakes & Pies

This is pretty good stuff. It will make your cake or pie look like it was made professionally and it helps keep your cut berries looking fresh until serving time. It tastes pretty darn good, too.

Clear Fruit Glaze for Cakes & Pies

Ingredients
  

  • 1/2 cup white granulated sugar
  • 2 T cornstarch
  • 1 cup fruit juice or 1/2 c lemon juice + 1/2 c water
  • 2 T corn syrup

Instructions
 

  • Bring the sugar and 1/2 cup of juice (or juice/water mixture) to a boil.
  • Dissolve the cornstarch in the remaining juice. Add to the boiling juice and stir until thick.
  • Stir in the corn syrup. Bring back to a boil and remove from heat.
  • Cool (in fridge to go quickly) and either dip your berries one at a time before placing on the cake or pie, or place all your berries and drizzle over them. Or if you plan on pouring your berries into/onto your pie/cake, mix with the glaze first and then pour.
