Our friend Bobby U is kind enough to supply us with a lot of zucchini during the summer, and they are HUGE! While I enjoy them braised with other vegetables, this is a really good recipe that is good as patties for a sandwich or appetizer-sized cakes for dipping.

Found this recipe online, but it was for a full-on wedding cake for 40-50 people. I halved everything and it worked out nicely. A very rich and moist cake. Made this one for your dad’s 60th birthday and all of our friends really loved it, as did your Pop.
This is a really, really good recipe that is light and super easy to make. Might be good with frozen raspberries or canned pineapple chunks.
Keeps in the fridge for up to a month. Nice and creamy. You can make it the consistency you want by adding milk. You can also add Parmesan cheese, bacon bits and/or lemon juice to mix up the usual ranch flavor a bit.
This was a hit when the Frenchies (my uncle Manu and cousin Valerie) came to visit Grandma in June, 2015. These pickles are simply amazing. If you plant pickling cucumbers in the summer, you will be canning them all summer long. Crisp and fresh, these will last in the refrigerator for 3-4 months. Since they take up room in the fridge, you will want to share with family and friends!
